Yesterday I made banana bread. It’s pretty good if I do say so myself. It made me feel like an ingredient mum because I didn’t let my bananas go to waste.
This is the third time I have made banana bread recently. However, this is only the second time that I have made good banana bread. I was put off for a while because my last one tasted too much like banana.
So I’ve decided to very generously grace you all with my banana bread recipe. When I say “my recipe” I mean that I used someone else’s recipe and now I don’t remember where I got it from so it’s mine now.
Of course it is gluten free, but if you’re inclined to eat gluten, then you may do so. I will not though.
So here it is.
Ingredients:
- 3 bananas (not too big, it will taste bad)
- 75g melted butter
- 1 teaspoon baking soda
- pinch of salt (not sure why)
- 150g sugar (this is probably too much though so like just eyeball it)
- 1 egg
- 1 teaspoon vanilla extract
- 200g flour (gluten free in my case)
- 1 teaspoon ground cinnamon
- chocolate chips – I just use dairy milk buttons and just kinda crush them up a bit
Now for the method:
- preheat oven to 170 degrees celcius for fan oven (I always forget this step and then have to wait ages so just don’t forget)
- mash bananas – if it doesn’t look gross then it’s not mashed enough
- add ingredients in order, whisking between
- pour into loaf pan (I put baking paper in it to make it easier)
- remember to put some of your chocolate chips on top; i also forget this step
- bake for 50-60 minutes
- “immediately turn out onto cooling rack” (not sure what the urgency is about here, it makes me feel under pressure)
